the exercise guides are available for download in the "Completing the Exercises" lesson.
You will see the download link in the right-hand "Related" box.

Is System Architect Essentials I and II Exercise Guide available for 7.1.8

No, these courses are based on Pega 7.1.6
When the courses are updated, an updated exercise guide will be published along with the update.
