Assigning and storing properties within java tags in html

Hi,

I'm trying to create an email treatment and using HTML but trying to pull in property/field vales of an Offer. I know you include the property via the menu button but what I want to do is to store it in a custom variable so I can build a programming logic of it later on. Is this possible? The above is what I was trying to do, it is simply declaring a String datatype and assigning the customer field value to it but it's throwing me an error.

I'm a novice user to the platform and not great at Java/JSP so please pardon me.
