the answer is yes for all your questions. Stream service, which is implemented as Kafka, is a must have for Pega infinity releases (8.1.x+).

Yes,The new archietecture of pega infinity & later comes with kafka. Search depends on kafka.Stream node should be defined for that.If it is unavailable then you will get pega0101 alert in pegaalert logs.
