I am configuring the SMS Channel to be used in Pega Marketing, and I was told by the implementation team (External Vendor) that it is a must to have the "Default" SMS Channel (no matter if it has a valid configuration or not).
I really doubt this setup.
1) Please advise if I can change it to other name? I.e. I will not have the "Default" SMS Channel in the channel list.
2) Do I need to modify the Campaign if there is already 1 using the "Default" SMS Channel and I can change the name?
I have also faced some issues if we delete the Default SMS Channel. However, It is always recommended to create a new SMS Channel with necessary configurations rather than renaming the Default one and use them in the Campaigns.

you could create many SMS channel, they are referenced in Offer rule -> SMS shape.
by default when you add an SMS shape to Offer rule, it defaults to "Default" SMS channel,
however the best practice is to use you own SMS channel which will be used to deliver that Offer, instead of using ootb "Default". this helps in case you want to change channels in future and segregate test offers with live ones..
